It’s made by stirring to whip in air bubbles to give it its creamy texture. The mixture is then cooled below freezing point to prevent ice crystals from forming to give rise to a smooth, creamy and soft cold treat.

Fun fact: Ice cream is popular in various formats around the world. In 16th century India, Kulfi, similar to today’s sorbet, was the most popular frozen dairy dessert on the Indian subcontinent.
